Pie Day

Not being a math person I never knew about the idea of Pi Day. But the years I taught at Veritas Academy, I was happy to partake in the yearly tradition of people bringing pies into school on March 14 (plus the fun math competitions played at the end of the day).

I came across this yummy-sounding pie recipe this week, and, since I had 5 ripe and ready lemons, I decided to try my hand at it. What a satisfying way to spend a snowy Saturday afternoon (after some good books had been read) and then a yummy way to enjoy Sunday (after a good nap was taken). Ned and I saved enough pie for tomorrow’s official Pi Day (3/14).

Best Lemon Cream Pie

The secret really is using real lemon juice - so squeezing out the juice is really worth it. Also, condensed milk . . . makes both Winnie-the-Pooh’s friend R oo and me happy. Also, the other best part is the crust made of those biscotti cookies you get on Delta flights. Hooray! They were at the grocery store. I didn’t make homemade whipped cream. It actually doesn’t need whipped cream, as we learned today.

This pie was even more lovely on my favorite plates I usually save for special occasions, but decided that I would use them for every day plates during the spring. They are actual Wedgewood . . . so why not enjoy them?
